Dive deep into the vibrant Balinese kitchen with us and take a peek into the heart of our culinary Bali – Paon Balikaru. But hold onto your chef’s hat, because this balinese kitchen isn’t just for cooking – it’s a living, breathing hub of Balinese culture, steeped in ancient rituals and customs.
This begins with the location and architecture of a Paon: the traditional kitchen is always located in the south of the balinese house and is always slightly lower than the other buildings in the compound. It is the realm of the two gods Brahma and Vishnu, who embody the elements of fire and water. Even today, the two gods are worshipped in Paon Bali with daily offerings – Brahma usually at the traditional wood stove and Vishnu usually in a large terracotta water pot.
At Paon Balikaru, you can immerse yourself in Balinese cuisine. You will be amazed by the ancient dishes and balinese cooking utensils, which were often made in Bali using the simplest of means. Thick tree trunks were used as chopping boards in balinese kitchen, mortars and pestles were usually made of robust wood to grind various ingredients in a stone vessel at the bottom. Bamboo baskets were used to store or steam rice, and bowls we´re made from dried coconut shells. And forget about fancy silverware – Bali Cuisine is all about the real experience of eating – traditionally by hand only!
There are no fridges or freezers in a traditional Paon. For Bali Cooking, it is part of the daily ritual to go to the market in the morning or to pick the ingredients fresh from the garden. The women in the family work tirelessly and conjure up new dishes every day in balinese kitchen. What is left over is a “feast” for the livestock and keeps the kitchen free of bugs – a win-win situation!
Furthermore, Balinese cooking secrets were traditionally whispered from one generation to the next, rarely landing on paper. This makes it all the more astonishing what tasty surprises the traditional cuisine of Bali has in store.
