The basic ingredients of this spice mixture are shallots, garlic, ginger, turmeric, lemongrass, grated coconut and shrimp paste – the quantities vary depending on the recipe and, of course, every restaurant has its own personal secret recipe for a tasty base genap. The aromatic spices and herbs blend together to form a harmonious paste that can even be kept in the fridge for a few days – perfect if you want to create a very special highlight at your next barbecue party.

The paste is thoroughly blended with the meat – whether you prefer fish, chicken, or pork is entirely up to your taste – just before preparing the skewers. The word ‘Lilit’ comes from the Balinese and means ‘to wrap’. In sate lilit, the meat mixture is traditionally wrapped around a lemongrass stalk. Nowadays, bamboo sticks are also used.
